Star anise is used by soups, stews and braising broths, to which it adds a sweet-liquorice-peppery flavour. It is used whole or as a powdered spice. It is also the dominant flavour in the five-spice Chinese blend. It is used to give a unique aroma to savoury dishes. Star anise is rich in antioxidants and vitamin A and C, which help fight free radicals responsible for early ageing and diabetes. The oil produced from Star anise contains thymol, terpineol and anethole, which treat cough and flu.
