Coconut Chutney

Serves – 8

Ingredients

1. Fresh whole Coconut – 1/2
2. Plain Yogurt- ½ cup
3. Vegetable Oil – 1 tbsp
4. Red Chilli peppers – 3 chopped
5. Mustard seed – ½ tsp
6. Cumin Seeds – ¼ tsp

Method:

Step 1: Place the coconut and yogurt in a food processor. Process to a paste-like consistency. Transfer to a medium bowl.

Step 2: Heat the oil in a medium saucepan over medium heat. Stir in chilli peppers, mustard seed, and cumin seeds. Cook until mustard seeds start to pop. Spoon over the coconut mixture. Cover, and refrigerate until serving.
