Shinjo Dark Soy Miso Paste is a thick, rich red-brown paste. It is made by fermenting soybeans, rice, barley, wheat using a particular type of mould, Aspergillus oryzae. It is one of the most popular soybean pastes in Japanese cuisine with a pronounced rich flavour, saltier than light soybean paste. Miso paste is rich in nutrients: amino acids, vitamins, proteins. It is used as a base for the preparation of broth, especially the famous Japanese soup Miso Misushiri, thick soups, snacks (miso-dengaku), in combination with lemon – as a salad dressing, goes well with soy sauce.
